A Simple Vegan Mince Pie Recipe

A little rough around the edges but still delicious.

As we get closer to Christmas, along with the panic of not having finished your shopping and the excitement for Christmas dinner, there also comes this strong desire to stuff you face with as many mince pies as possible. In which case, this simple mince pie recipe is somewhat of a hero. A handful of ingredients and less than an hour of your time and you'll have 12 almost completely homemade mince pies to enjoy.

Makes 12 mince pies

200g Plain flour
100g Vegan butter
4 tbsp Ice cold water
Pinch of salt
Sprinkle of cinnamon
1 Jar of Mincemeat - or you can make your own.
Plant-based milk

- Mix the flour and salt in a large mixing bowl.
- Add the butter and cinnamon and rub the mixture together until it resembles breadcrumbs.
- Add the water and mix to form a dough.
- Roll out the dough on a floured surface to 2-3mm thick and cut into small circles using a cookie cutter.
- Place into a greased cake tray and add a teaspoon of mincemeat on top.
- With the remaining dough, cut into circles or a shape of your choice (xmas trees, stars, etc) and place on top of the mincemeat.
- Brush the tops with plant-based milk and cook for 20 minutes at 200°C
