Vegan Vegetable Lasagne Recipe

I'm trying to experiment with food a lot more and having a boyfriend who loves cooking makes it a whole lot easier. I bought a vegan cheese sauce in a recent food shop and we decided to first try it in a lasagne. 

Ingredients (Serves 4 people) :
 2 Large Onions, 4 Cloves of Garlic, 5 Large Tomatoes, 4 Large Carrots, 2 Peppers, 1/2 BroccoliSpinach

Bouillon Powder, Dairy Free Cheese Sauce Powder, Vegan Cheese, Pasta Sheets

Salt, Pepper, Oregano, Basil, Lemon Juice, Balsamic Vinegar


1. Finely chop the Onions and Garlic. The finer they're chopped, the more flavour you'll get out of them.

2. Chop up the Carrots, Peppers and Broccoli

3. Boil the Carrots and Broccoli.

4. Blanch the tomatoes.

5. Once the veg is boiled, leave it to one side. Once the tomatoes are blanched, quarter them and put them into a frying pan, along with salt, pepper and a quirt of lemon juice.
To help the tomatoes reduce quicker and for taste purposes, add a slash of balsamic vinegar.

6. Once the tomatoes have reduced slightly, add the onion and garlic and cook until the onions start to go slightly transparent.

7. Add the veg and stir well. 

8. Mix in 1 teaspoon of Bouillon powder and herbs to taste.

9. Place pasta sheets into a bowl of luke warm water and leave until the sheets soften.

10. Mix the cheese sauce accord to the instructions.

I used Free & Easy Dairy Free Cheese Sauce Mix, which meant adding 12 teaspoons of the powder to 900ml of unsweetened soya milk.

11. Once the pasta sheets are soft, the cheese sauce is ready and the veg is cooked, start layering the lasagne. Start with the veg and sauce, cover with cheese sauce and top with pasta sheets. Continue this until you've used up all the ingredients.

12. Place in the oven at 180 degrees for 20 minutes.

13. After 20 minutes, take it out and leave to cool slightly. 

Grate cheese on top, I used Violife Cheddar flavour cheese, and place under the grill for a few minutes. 

14, Once the cheese is melted, take it out and leave to stand for 5 minutes before serving.

15. Enjoy!

We had ours served with a simple salad of lettuce, spring onion and cucumber.
I haven't had lasagne in about ten years and wasn't sure if I'd like it. As it turns out, I'm a big fan of lasagne, well this one anyway and I may have had more than one piece.

The quantities given are to serve four people, but of course they can be easily adjusted. Likewise, the herbs used can be changed and mixed up to suit your taste.
